- 3 sweet potatoes (large, 2 1/2 pounds)
- 1/4 cup extra-virgin olive oil
- 1/4 cup tahini (sesame paste)
- 2 Tbsp. extra-virgin olive oil
- 4 Tbsp. ginger root (roughly chopped)
- 3 cloves garlic (medium, roughly chopped)
- 2 Tbsp. tamari soy sauce (soy sauce or coconut aminos)
- 1/4 cup water
- 1 cup mayonnaise
- 2 tsp. garlic (finely minced, 2 medium cloves)
- 2 tsp. fresh lime juice
- 1 tsp. chipotle chile (powder)
- kosher salt (or sea salt, to taste)
- cooked brown rice (and wild rice or cooked quinoa or a combination, 1/3 cup or so per person)
- 1 bunch scallions ( trimmed, brushed with olive oil, grilled for a 3-4 minutes, salted and sliced)
- 1 head broccoli (cut into bite sized florets, blanched and drained)
- eggs (fried or poached, 1 per person)
