- 1 sweet onion (sliced, for grilling, optional)

- 4 garlic cloves (smashed, chopped)

- 1 bunch cilantro (or about 1 cup packed, stems OK)
- 1 bunch Italian parsley (about 1 cup packed, thin stems OK)
- 1/4 cup fresh lime juice (1-2 limes)
- 1/2 cup olive oil
- 1/4 cup chopped onion
- 2 garlic cloves
- 2 tsp. ground cumin
- 2 tsp. ground coriander
- 3/4 tsp. kosher salt
- 1/2 jalapeño pepper
- 4 tomatoes (vine-ripe, chopped)
- 1/2 red onion (medium, chopped)
- 2 green onions (white and green parts, sliced)
- 1 serrano chili (minced)
- 1 handful fresh cilantro leaves (chopped)
- 3 garlic cloves (minced)
- 1 1/2 limes (juiced)
- 1/4 cup virgin olive oil
- 1 tsp. kosher salt
- 2 cups radishes (mix of sliced, onion, or carrots, cauliflower, or whatever you like)
- 1 cup vinegar
- 1 cup water
- 1/2 tsp. kosher salt
- 2 Tbsp. sugar
- 1 tsp. coriander seed (whole, or whole peppercorns)
