- 4 slices whole wheat bread (crusty, 1/2” thick)
- 2 Tbsp. olive oil
- 1 clove garlic (peeled)
- 2 avocados (ripe Fresh California, peeled, seeded and diced)
- 2 arugula leaves (cupsloosely packed, cleaned)
- 1/2 cup vinaigrette (Heirloom Tomato, see make-ahead recipe below)
- salt (As needed, to taste)
- black pepper (As needed, to taste)
- 1/4 cup extra-virgin olive oil
- 2 cloves garlic (finely minced)
- 2 tsp. paprika
- 1/2 tsp. cayenne pepper
- 1 tsp. dried oregano (crumbled)
- 1 tsp. dried thyme
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 2 tomatoes (heirloom)
- 3/8 cup extra-virgin olive oil

- 2 Tbsp. rice wine vinegar (sweetened)
- 3 Tbsp. scallions (slivered, bias cut)
- 1 Tbsp. cilantro (finely chopped)
