- 1 can green chiles (chopped)
- 1 medium onion (diced)
- 8 slices bread (I did use some great chiabatta, but use what you have)
- 1 pkg. queso fresco cheese (; ours was 12 oz.)
- chipotle aioli
- 1/4 cup mayonnaise
- chile sauce (Adobo)
- sauce (Combine, with mayonnaise to taste...some like it hot!)

This grilled cheese is excellent. I would highly recommend this over a regular grilled cheese sandwich. I make tomato basil soup to serve with it.
