- olive oil (for brushing)
- 1 tomato sauce (generous cup prepared, see note up top about doctoring your own)
- 8 oz. mozzarella (aged, sold in plastic, not water, this amount is light on the cheese, use more if that’s your preference)
- 1/4 cup grated Parmesan Romano cheese (finely)
- salt
- pepper
- 3 leaves fresh basil (torn or sliced)
- 2 cups bread flour
- 1/3 whole wheat flour
- 1 1/4 tsp. active dry yeast (or, half a packet instant)
- 1/4 tsp. table salt (or fine sea)
- 3/4 cup water (room temperature)
