- 2 zucchini (trimmed, cut on the diagonal into 1/2″ thick pieces)

- 1 English cucumber (peeled and chopped)
- 1 cup cherry tomatoes (halved)
- 1/2 cup pitted kalamata olives (halved)
- 1/3 cup mint leaves (chopped)
- 1/3 cup basil leaves (chiffonade)
- 1/3 cup olive oil
- 1/4 cup aged balsamic vinegar
- 4 oz. feta (piece of, broken into chunks, I’d love to try this with fresh mozzarella next time!)
