    Delicious. Instead of mint I used cilantro, I also added honey to the dressing to contrast with the lime. I threw in some rosemary lemon chicken breast slices to this, one thinly sliced Persian cucumber for crunch and used mixed baby kale. Completely forgot the nuts (nuts!) but it worked well anyway.
