- 3 Tbsp. olive oil (plus more for grill)
- 2 tsp. lime zest
- 3 Tbsp. fresh lime juice
- 3 cloves garlic (crushed)

- 1 1/4 cups coconut milk (canned)
- 1 1/2 cups jasmine rice (rinsed well and drained well)

Loe this recipe. Have made it several times now and its very adaptable to adding/subtracting ingredients in the salsa portion. I keep the salmon marinade true to recipe other than doubling and marinading longer (with a splash or two more of lime juice because I love it). Try it you will love it

The coconut rice was a little sweet for my liking so next time I might use less coconut milk. Other than that the mango salsa came out great!! I love fresh flavors & this one hit the spot!

I'm not a fan of coconut or mangos so I used the bare minimum in those. I also baked the salmon (its my preference) and changed the recipe a little. I was actually surprised that I liked it. I used coconut water instead of coconut milk for the rice and salsa. There was no overwhelming coconut flavor, but you could taste that there was something else there.
I also baked the salmon in a little lime juice and coconut water (you kind of want to bake with a little liquid).

Amazing!!! Directions are great I personally did 10 mins each side on the salmon cause I had some thicker pieces.

This was the best summer dish I have grilled thus far! The rice was an excellent pairing to the mango and onion!

It turned out fine with one exception. The rice was too soft and gummy for me. If you like the rice drier, then I recommend that you follow directions on the rice bag. I will definitely try this again.

This recipe is delicious. I made this recipe a few times already and I prefer plain brown rice over the “coconut rice.” The coconut rice didn’t really have much of a coconut taste to me. Overall, I still enjoy this meal.

This was an amazing recipe! The salmon and coconut rice paired beautifully together. Adding the mango salad took it to another level. Overall a very enjoyable meal to prepare and cook.

This recipe is awesome! Made a couple changes because that’s what I had on hand. Used Vidalia onion not red, Ataulfo mango and white basmati rice. I’d make again and follow the recipe exactly next time. And there will be a next time!! My husband felt it had a slightly strong lime flavor and I felt the cilantro was noticeable. That won’t stop us from eating it again!! 😋❤️

Great dish! Enjoyed how the deferent flavors blend together. Swapped the red onion with a little finely chopped Jalapeños. Also marinated the salmon for a few hours opposed to a short time as the recipe implies (simply because of timing). Will definitely make again.

Marinade was perfect
Didn’t grill but oven roasted (425 F for 20 mins) it after a pan seared (5 mins)
Served with coconut and ginger rice
Easy Sunday evening dinner

Didn't find it all too thrilling. Possibly lay in my mango not being super flavourful (although ripe), but all in all (the marinade, the cooked salmon etc) were all just a bit lacking for me. Would potentially add fresh chilli, more acidity and spring onion instead of red onions if I were to make this again.
