Awesome... Used a brisket that was brined for 7 days. Slow smoked on a stick burner for 12 hours, Rested for 12 hours. This was great recipe that did not overpower the star of the sandwich which is homemade Smoked Pastrami!

This was a good, quick and easy recipe. However, I too literal when following and cooking a recipe. The ingredients call for red onion in addition to the French fried onions, but recipe never tells you to use them. Likewise, ingredients tell you to buy one package each of Sargent provolone and pepper jack cheeses. However, one package of provolone cheese did not contain enough slices to cover each sandwich with two separate layers of two slices each. So I didn’t have enough provolone. I should have purchased two packages of provolone. Other than that, I added mustard to one side of bread and baked oven instead of grill for a guys lunch. It was great!!
