Grilled Ham and Peach Salad



  • 1 tablespoon oil
  • 4 peaches (small, pitted and halved)
  • 7 ounces sliced ham (thickly)
  • 2 heads baby romaine lettuce (washed and leaves separated)
  • 1/4 cup shelled pistachios (toasted and chopped)
  • 2 tablespoons olive oil
  • 1 tablespoon white balsamic vinegar
  • 2 teaspoons honey
  • 1 teaspoon coarse grain mustard

    1. Brush a grill pan with oil and heat on high. Cook the peaches, cut-side down for 1-2 mins. Cook the ham in batches for 2-3 mins each side, until charred. When cool enough to handle, tear into bite-size pieces.
    2. Arrange the lettuce leaves, peaches and ham on serving plates and sprinkle with the pistachios. Whisk the dressing ingredients and season to taste. Drizzle the dressing over the salad and serve.
