- 32 oz. halibut steaks
- salt
- 1/4 cup dry vermouth (or dry white wine)
- 2 Tbsp. EVOO
- 2 lemons (halved)
- 2 red bell peppers (large)
- 1/4 cup EVOO
- 1 white onion (medium, quartered and thinly sliced)
- 1 red onion (medium, quartered and thinly sliced)
- 1 green pepper (large mild, such as cubanelle, seeded and sliced into 1/4-inch strips)
- 1 chile pepper (red or green, such as Fresno or jalapeno, seeded and thinly sliced)
- 4 cloves garlic (thinly sliced)
- 2 sprigs oregano
- salt
- 2 Tbsp. tomato paste
- 1/2 cup dry vermouth
- 1 Tbsp. sugar
- 1/2 cup chicken stock (or water)
- 3 Tbsp. capers (drained)
- 2 tablespoons white balsamic vinegar or white wine vinegar (or white wine vinegar)
- 1 handful flat-leaf parsley (chopped)
- toasted sliced almonds (optional)

Directions
- Heat an outdoor grill or a grill pan over medium-high.
- Season the fish on both sides with salt and pepper. Douse with the vermouth and coat in EVOO. Season the cut sides of the lemons and drizzle with EVOO.
- For the peperonata, roast the red peppers over a gas burner or under the broiler, turning occasionally, until blistered and blackened all over. Transfer the peppers to a large bowl, cover with plastic wrap and let steam 15 minutes. Using a paper towel, rub the skin off the peppers, then split, seed and remove the stems. Slice lengthwise into 1/4-inch-thick strips, then cut the strips in half crosswise.
