- 8 tortillas (six inch, corn-flour mix Grilled)
- lime (for garnish, optional)
- 2 large garlic cloves
- 3 whole chipotles
- 1 Tbsp. adobo sauce (from the can of chipotles)
- 4 Tbsp. olive oil
- 1 lime (zest from)
- 1 Tbsp. lime juice
- 1 tsp. ground coriander
- 1 Tbsp. ground cumin
- 3/4 tsp. kosher salt (more to taste)
- cracked black pepper
- 2 1/2 cups peaches (diced -just ripe, about 3–4 peaches)
- 1/4 cup diced red onion (finely)
- 2 tsp. habanero (minced, or use jalapeño for less spicy)
- 1/2 cup chopped cilantro (tender stems ok)
- 1/8 cup fresh lime juice (or more to taste)
- 1/8 tsp. kosher salt (or more to taste)

Great dish! Used mahi mahi and jalapeño for the salsa. There’s enough spice in the fish marinade so you don’t need to make the salsa too spicy.
