  • 1 tablespoon olive oil
  • 1 onion (small, chopped)
  • 2 garlic cloves (minced)
  • 1/4 cup balsamic vinegar
  • 4 medium tomatoes (diced)
  • 1/4 teaspoon dried thyme
  • 1 cup water
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups Swiss chard (shredded)
  • 4 skinless chicken breasts (boneless, 4 oz each, grilled and sliced)

    Directions

    1. In a saucepan, heat 1 tablespoon of the oil over medium heat. Add the onion and garlic and sauté until the onion is softened, about 3 minutes. Increase the heat to high, add the balsamic vinegar and cook for 3 minutes. Add the remaining ingredients except the Swiss chard and the chicken, and cook for 20 to 25 minutes or until the tomatoes have softened. Remove from heat and transfer to a blender. Blend until smooth. Set aside.
    2. In a medium skillet, heat the remaining 2 teaspoons oil. Add the Swiss chard and cook until wilted, about 4 minutes.
    3. Arrange 4 plates with 1/2 cup sauce topped with 1/4 cup Swiss chard. Arrange a sliced chicken breast on top of each plate. Serve immediately.
