- 1 garlic clove (thinly sliced)
- 3 slices ginger
- 12 oz. coconut milk
- 2 tsp. turmeric
- 1/4 tsp. salt
- 3 heads baby bok choy (halved lengthwise)
- 4 scallions (halved lengthwise)
- 1 Tbsp. coconut aminos
- red pepper flakes (to taste)
- fresh basil leaves (or Thai basil for a more Asian flavor)

I made this tonight for the fam
I did my own spin on it, keeping it Paleo approved I added small sweet bell peppers and sweet potatoes
I did not put the red pepper flakes in because I have young children and they don't like spicy like their mama does ;)
It was delicious and filled me up quick
