- 1 large onion (diced)
- 4 cloves garlic (diced)

- 4 cups chicken stock
- 1 Tbsp. salt
- 1/2 tsp. black pepper (1 tsp black pepper if you like a little more heat)
- 1/4 tsp. cayenne (optional, but I love a bit of spice)
- 1 can juice
- 28 oz. San Marzano tomatoes
- 1 handful basil leaves (roughly chopped)
- 1/4 cup heavy cream
- 6 Tbsp. salted butter (softened)
- 8 slices sourdough bread
- 2 cups Gruyere cheese (shredded)
- 2 cups extra sharp cheddar cheese (shredded)
