Carrots like you’ve never had before. So much flavor. Really enjoyed the avocado in the background. The mint cuts the zippiness of the pepper. Would recommend cutting the mint into smaller edible pieces.

The instructions are pretty straight forward. I didn't grill the chipotle and grind it. I used chili powder instead. I also, brushed the lemon honey sauce over the carrots instead of placing them in it. The mint was a nice touch. Slightly grilled avocado. I used Sriracha oil instead of regular olive oil. I'd definitely make again.
