- olive oil

- pepper
- chili flakes
- 1 Tbsp. lemon zest
- 1 pinch fresh thyme
- 1 red bell pepper (halved and seeded, for grilling)
- 1/2 sweet onion (Walla Wall, sliced in thin rounds for grilling)
- 2 cups new potatoes (mini, I used really tiny ones…under 1 inch in diameter)
- 2 baby arugula
- 1 Tbsp. preserved lemon
- 2 Tbsp. lemon juice
- 4 Tbsp. olive oil
- 1 Tbsp. shallot (finely chopped)
- 1/8 cup spanish chorizo (optional)
- salt
- pepper
- 1 tsp. herb (fresh, like parsley, thyme, or tarragon)
