- 2 Tbsp. minced garlic
- 1 lemon
- 1/4 cup olive oil
- 3 Tbsp. balsamic vinegar
- 1/4 tsp. ground black pepper (freshly)
- 1 cup quinoa
- 2 cups water (or chicken stock)
- 3 cups vegetables (roasted or grilled, I used brussel sprouts, carrots and cauliflower)
