- 1/2 cup green onions (thinly chopped, white and green parts)
- 1/2 cup red pepper (small diced)
- 3 Tbsp. rice wine vinegar

- 1/4 tsp. red pepper flakes (more or less to taste)
- 1/2 tsp. coarse kosher salt
- 3 Tbsp. brown sugar (divided, you'll use some for the chicken, some for the noodles)
- 2 Tbsp. low sodium soy sauce (divided, same as the brown sugar)
- 1 tsp. peanut (canola, vegetable or coconut oil)
- 1/2 tsp. salt
- 4 boneless skinless chicken breasts (about 2 pounds)
- 12 oz. noodles (dry spaghetti)
- 1/3 cup low sodium chicken broth
- 1/4 cup creamy peanut butter
- 2 Tbsp. rice wine vinegar
- 2 Tbsp. fresh lime juice (from about 2 limes)
- 1 Tbsp. fresh ginger (minced)
- 1 Tbsp. chili garlic sauce (more or less to taste)
- 1 tsp. toasted sesame oil
- 1/2 cup fresh cilantro (minced)
