- 1 1/2 lb. butternut squash (peeled and cut into 1/2" cubes, Store bought is fine but you may have to cut it smaller)
- 1/2 cup olive oil (good quality, separated)
- sea salt
- pepper
- 1 cup pomegrante juice (reduced to 1/4 cup)
- 1 Tbsp. champagne vinegar (or white balsamic)
- 1/2 lemon
- 1 Tbsp. honey (or a few drops liquid stevia if you prefer)
- 1/2 cup pomegranate seeds
- 3/4 cup pecan (roasted salted, pieces)
- 1/4 red onion (peeled and sliced or chopped)
- 1 cup crumbled feta (I also love soft goat cheese in this salad)
