- 3/4 cup water
- 3 Tbsp. golden brown sugar
- 2 Tbsp. rice vinegar
- 1 tsp. sea salt
- 3 cloves garlic (peeled, smashed with the flat side of a large knife)
- 1/2 serrano peppers (cut lengthwise, chopped, including seeds)
- 10 grape tomatoes (ripe but firm, halved lengthwise)
- 4 tsp. lime juice
- 1 lb. ground pork
- 1/2 lb. ground chuck (preferably grass-fed)
- 2 tsp. canola oil (plus more for cooking meatballs)
- 1/3 cup shallots (minced)
- 1 Tbsp. minced garlic
- 1 tsp. lemongrass (minced, I used the bottom two inches of the stalk, removed the tough fibrous outer layers and minced the soft, innermost part of the bulb)
- 1/2 cup green papaya (grated, flesh should be white, trim stem end, halve, and peel off and discard green skin with vegetable peeler)
- 2 tsp. cilantro stems (finely chopped)
- 2 tsp. fish sauce
- 1/4 cup peanuts (roasted, unsalted)
- green cabbage (leaves, washed, dried and trimmed to pieces, triangles, rectangles big enough to hold a small meatball)
