- 2 lb. ground beef (original recipe called for 2 pounds sirloin, cubed and cooked in oil)
- 1 onion (large, about 1½ cups, finely chopped)
- 1 bell pepper (finely chopped)
- 3 heads roasted garlic (not cloves)
- 1 cup Hatch chiles (chopped roasted, or 2 small cans green chiles, original recipe called for 6 green chilies, fresh or roasted, finely chopped)
- 2 lb. green tomatoes (cored and finely chopped)
- 1 1/2 tsp. salt (I use kosher, plus more to taste)
- 1/2 tsp. pepper (original recipe called for white, use what you have)
- 1 cup broth (vegetable, beef, chicken--your choice)
- shredded cheese (optional, to serve, sour cream, spaghetti noodles, tortilla chips)
