- 2 Tbsp. lemon juice (freshly squeezed)
- 1 tsp. anchovy paste (or 2 anchovy fillets)
- 1/2 cup olive oil
- 3/4 tsp. sea salt
- pepper
- 1 head romaine lettuce leaves (washed, dried, and left whole, or about 3 cups of chopped standard Romaine)
- 1 cucumber (chopped)
- 2 stalks celery (sliced)
- 1/4 cup red onion (diced)
- 1/4 cup capers (drained)
