Description
Green gazpacho is a delightful deviation from the traditional chilled tomato soup from Spain. Instead of your typical tomato and garlic puree, this recipe calls for mildly sweet grapes, cucumbers, and celery for a cool soup to sip on a hot summer day.

- 1/4 cup water (for the soup)
- 1 cup green grapes (for the soup)
- 1/2 cup cucumber (chopped, for the soup)
- 1 clove garlic (for the soup)
- 3 stalks celery (for the soup)
- 1 cup bread (for the soup)
- 2 1/2 tsp. sherry vinegar (for the soup)
- 1 tsp. kosher salt (for the soup)
- 1/3 cup olive oil (for the soup)
- 1 pinch cayenne pepper (for the soup)
- 1 cup green grapes (sliced for the relish)
- 1 cup cucumber (diced for the relish)
- 1 tsp. jalapeno (diced for the relish)
- 1/2 cup green tomatoes (diced for the relish)
- 1 pinch freshly ground black pepper (for the relish)
- 1/2 tsp. kosher salt (for the relish)

Directions
- Combine water, grapes, cucumber, garlic, celery, and bread in a blender. Blend at a high speed until very smooth, about two minutes. Make sure to scrape down the sides with a rubber spatula to incorporate everything.
- With the blender running, add the sherry vinegar and kosher salt. Slowly drizzle in the olive oil. Once creamy, add in the cayenne and blend for a few more seconds.
- Transfer to a bowl or container, cover, and refrigerate until cold.
- For the relish, toss all ingredients together until well combined.
- Pour gazpacho into a bowl and top with the grape relish. Serve with a drizzle of olive oil.

Very tasty. Only used tbsp of olive oil. And 500 g grapes. Recipe was only enough for three bowls. Served with kampioentje. Next day soup tasted even better. Next time double soup quantity!
