- 2 lb. pork knuckle (1/2-inch cubes)
- 2 onions
- 2 cloves garlic
- 4 poblano chiles (roasted, peeled and seeded)
- 1 green bell pepper (chopped)
- 2 jalapeno chilies
- 1 lb. tomatillos (cut in half)
- 1 bunch cilantro stems (chopped)
- 4 lime juice
- 2 tsp. kosher salt
- tortillas (As needed)
- cotija cheese (As needed)
- 1 red onion (thinly sliced)

Directions
- 1. In medium sauce pot cook onion, garlic, peppers, cilantro stems, and tomatillos over medium/high heat for 15 minutes or until tomatillos are soft
- 2. Blend tomatillo mixture with cilantro leaves and lime juice in food processor
- 3. Season pork and brown meat over high heat
- 4. Add green sauce to pork, cook until pork is tender and season to taste
- 5. Serve with tortillas, cheese, and red onion
