For those of you that don’t like red enchilada sauce like me, try this! It was great. Perfectly seasoned and not over powering or too spicy. Recommend the chicken in instant pot to shred first. Very good recipe.

So good! I made the chicken in the instant pot instead of a crock pot. I also used coriander instead of cumin. My favorite enchilada recipe, ever!

Used rotisserie chicken to use it up and it worked great! Loved the flavors and was so easy. Definitely a keeper. Thanks.
