Description
This recipe results in a delicious enchiladas with a creamy green chile sauce. Very tasty!
Ingredients

- 2 lb. chicken (shredded)
- taco seasoning
- 1 can diced tomatoes
- 3/4 cup diced onion
- 2/3 cup water
- 1/4 cup butter
- 1/4 cup flour
- 1 1/2 cups chicken broth
- 1 cup sour cream
- 1 can green chilis
- 10 oz. mexican blend cheese (shredded, for inside the enchiladas)
- 2 oz. mexican blend cheese (shredded, for on top)
- 8 tortilla shells

Directions
- Combine chicken, taco seasoning, tomatoes, water, and onion in a large frying pan. Simmer for 15 min or until the extra fluid has evaporated.
- Using the tortilla shells and 10 oz of cheese, make 8 enchiladas and put them in an oven safe pan.
- Preheat oven to 375 degrees F (190 degrees C).
- Melt the butter in a saucepan over medium heat. Add the flour and whisk until mixture begins to boil. Slowly add the broth, stirring with a whisk until thickened. Mix in the sour cream and chiles, heat thoroughly but do not boil, stirring occasionally.
- Pour mixture over the enchiladas. Bake in pre-heated oven for 20 minutes or until heated through. Top with remaining Mexican blend cheese and bake for 5 more minutes.
