Very good! The mint is subtle. I may add just a wee bit more next time. And I used Vidalia vs. red onion because it’s what I had. Red is a little stronger which may be the better choice. Regardless, this is a very good salad, and I will make it again. My thanks to The Kitchen is My Playground and to Yummly!

Flavors were amazing, I didn’t use my blender and roughly chopped the mint and used avocado oil infused with garlic instead, so yummy! Was hoping for leftovers....but no!
