Great, even though I served it 2 hours later vs letting rest overnight . One of my favorite dishes. Try it!

Amazing. The marinade is very flavourful and so simple to make. Highly recommended if you want something easy on a weeknight!

I used thighs rather than breasts, thinking them less likely to dry out on the grill. I also used lime rather than lemon, and added about a tsp of lime juice, and bit of ground cumin for more of a curry flavor, and turmeric to give it some color. On the skewers I added chunks of fresh tomato here and there for color and variety. I did them on the second rack of the grill with the cover closed, and gave them plenty of time - 30 minutes, maybe? 20? not sure...to develop a bit of char over the outside. They stayed nice and juicy, and were well received.
