  • 1 pint grape tomatoes (baby, halved)
  • 1 cucumber (large, sliced)
  • 6 ounces pitted kalamata olives (drained)
  • fresh basil (for garnish)
  • feta cheese crumbles (for garnish, Hint: You can serve extra on the side for individual portions if you want.)
  • red wine (Greek, Vinagrette, I used about 2/3 of what the recipe makes)

    As a single person, I am either having to downsize just about any recipe or I am having leftovers. Sometimes I get the right measurements, sometimes not and that’s okay- most of the time it turns out delicious. This is one of those times. I used half the called for ingredients and made a couple changes. I subbed low sodium green olives for kalamata, subbed raspberry vinaigrette for red wine (using way less), and added a little bit of kraft Italian 5 cheese. It’s absolutely positively amazingly delicious!
