- 3 tortillas (large)
- 1 tsp. oil (Sage, or any herbal oil, Vegetable oil will work if you don’t have an herbal oil)
- 1 cup green olives (pitted California Ripe)
- 1 cup black olives (halved)
- 1/2 cup red onions (finely chopped)
- 1 cup cheddar cheese (shredded, optional)
- 1/2 cup vegan cheese (shredded, optional)
- 1 cup feta cheese (Vegan Alternative – Extra Firm Tofu soaked overnight in Lemon Juice and Garlic. Or Extra Firm Tofu soaked overnight in saltwater or Miso)
- 1 cup hummus
- 1/2 cup pita chips (Stacy, coarsely crushed)
- 1/4 cup jalapeno (chopped)
- 2 tsp. capers
- 1/4 cup cherry tomatoes (chopped)
- 1 cup chick peas (canned, or soak ½ cup of dry chick peas in hot water overnight – optional)
