Great chicken soup. I used the measurements as a guideline, using 2+ cartons of chicken stock and a package of pearl couscous (probably about 1.5 cups). Added some chopped carrots and celery, because, hey...it's chicken soup! The lemon zest and feta are essential, and the red pepper flakes add a nice touch of heat. I added the lemon jiuce, too and a little Penzeys greek seasoning. Perfect! Will make often and this recipe is easily adaptable.

Pretty easy to make. I think the next time I make it I will add a bit more lemon and potentially some carrots or spinach or both.

My husband and I liked the soup. The lemon gave it a nice light and fresh flavor. Since there were hardly any vegetables in it, I added cavolo nero which was a great addition.

I really like this recipe! I added lemon slices instead of just the zest, and some ginger and it tasted great.

Very good, no complaints here. Left out the feta cause I am not a fan but spot on otherwise.

I have made this several times. I am a vegetarian and use Better Than Bouillon's No Chicken Chicken Base and Quorn Chicken tenders for the parts that call for chicken components. To make it a bit more hearty, I add some cut green beans and some Ditalini pasta instead of the couscous. I also add some chopped fresh spinach. The broth from this is so good that now when I make it, I triple the broth recipe, enjoy one complete pot of soup by adding the other ingredients, and freeze the leftover broth in 2 separate containers for later use. Instead of feta, we just usually sprinkle parmesan on top. Both the feta and parmesan are nice additions but really not necessary if you happen to be lactose intolerant. We really like this soup at our house.

Delicious comforting soup that the whole family enjoyed! I did make some changes though: did not include onion or garlic and only used 1 tsp of lemon juice. I also added 4 chopped carrots, about 1 1/2 cup sliced mushrooms and 4 big handfuls of spinach. If you do it like overlooked vegetables I would recommend cooking the chicken then while you are shredding the chicken, cook the carrots for about 3-5 minutes with the pearl couscous. Then add the mushrooms and spinach. When it is almost done cooking add back in the shredded chicken. Definitely will make again!

Really enjoyed this soup! Made without feta for dairy free. Added lemon zest along with juice and used Italian parsley instead of chives. Flavour was yummy, although I would recommend cooking the pearl couscous in a separate pot so it doesn’t become bloated as the soup sits awhile. I would definitely make this again.

It wasn’t as flavorful as I was hoping. Though I did omit the feta because my daughter can’t have dairy. There is a goat feta I’ve seen, I’ll try that next time since goats milk is suitable for her.

Very flavorful . Used quinoa as I am gluten-free . Even my husband called it one of his favorites .

I loved this recipe. I did not have the chives so made it without the chives and I used orzo instead of cous cous. Loved!

This soup is delicious! I made a few changes: added rotisserie chicken because that is just easy (It happened to be lemon pepper flavored). I left out the rice/couscous because I don't eat carbs. I only zested 1/2 a lemon (because that's all I had in my fridge) and squeezed as much juice out as possible to make up for the rest. I could have added more lemon to be honest but this recipe came out really delicious and healthy! I will make again with rotisserie and more lemon.

This soup was VERY good, although I had some issue with my chicken being undercooked once it was time to shred it. Consequently, I had to let it cook longer which resulted in soggy couscous. I would suggest shredding the chicken while the couscous is cooking.
I also added a bit of lemon juice to highlight all the flavors at the end. The bits of Feta were the best part!!
