- 1/2 red onion (small)
- 1/2 cup olives (sliced)
- 1/2 cup corn kernels
- 2 hard boiled eggs (finely chopped)
- 15 oz. chick peas (rinsed and drained)
- 4 cups baby spinach (lightly chopped)
- 1 bunch fresh oregano (basil and rosemary)
- 3 Tbsp. red wine vinegar
- 2 Tbsp. light olive oil
