- 8 boneless chicken thighs (trimmed)
- 1 Tbsp. Greek seasoning (I use one from Spice & Tea Exchange)
- 1 tsp. coarse sea salt
- 1 tsp. ground black pepper
- 1 cup chopped onion
- 2 Tbsp. minced garlic (plus 3-4 whole cloves of garlic peeled)
- 2 Tbsp. lemon juice (freshly squeezed)
- 2 tsp. dried oregano (or fresh, finely chopped if fresh)
- 1 cup chicken stock (organic, not broth, you want the rich flavor from the stock)
- 1 cup pitted kalamata olives
- 1/2 cup roasted red pepper (chopped)
- 1 Tbsp. capers (drained)
- 1/4 cup sundried tomatoes (chopped, in olive oil)
- 4 cups cauliflower florets
- 3 Tbsp. extra virgin olive oil
