    This recipe is great for the most part, but i ended up altering it quite a bit after i made it for a second time. When i first made it (following the exact recipe) i came to the conclusion that the balance of wet-to-dry ingredients was off, especially for the marinade. i ended up using more red wine vinegar and lemon juice and backing off on the garlic powder and oregano a bit. i also think that this mixture needs to sit with the chicken for longer much longer than indicated in order to allow the flavors to soak in (i did a couple of hours, but the end result was so worth it). I also think that this dinner is for two sheet pans— trying to do one is possible but making room for 6 (at least) thighs and 4 cups of potatoes is a lot and makes flipping difficult. i ended up cooking the potatoes and chicken on separate sheet pans in the same oven simultaneously. i also added a bit of the ingredients (minus garlic powder) that went into the chicken marinade (in addition to what was already indicated) onto the potatoes and i liked the end result much more. With these changes this dinner is absolutely delicious. i made it for my family (4 people) and got rave reviews 😉 i’m also sure it would work great for meal prepping for one or multiple people. a final note, i’d love suggestions for greens to go along with this, i feel like that’s the only real thing that’s missing. Great meal!
