- 680 grams dried fruit (– choose a combination that you like, I use 200g dates, 200g dried figs, 100g raisings, 100g dried apricots, 80g dried cranberries)
- 225 grams bread crumbs (brown, made from 280g of fresh brown bread)
- 115 grams flour
- 115 grams granulated sugar (golden)
- 115 grams light brown sugar
- 1 Tbsp. golden syrup
- 225 grams suet (vegetable)
- 1 grated carrot (coarsely)
- 1 apple (coarsely grated)
- 1 Tbsp. marmalade
- 1 tsp. mixed spice (I use my Pumpkin Spice Mix – see recipe on this site)
- 1/2 tsp. nutmeg (around half a grated nutmeg)
- 1/2 tsp. salt
- 1 tsp. baking powder
- 3 eggs
- 60 mL brandy
- 60 mL cointreau ((or 120ml of one or the other – or none at all!))
- 80 mL milk
