I love this recipe. My grandmother has one similar, but we were unable to find it, so I searched and found this one! It’s delectable.
I did make some modifications:
- Subbed 20% of the white flour for coconut flour.
- All sugar was replaced with Swerve sweetener at 1:1.
- Milk was replaced with cashew milk, and I added 20% more due to the density of the coconut flour.
- The dough was very sticky initially, so I let it sit in the fridge for 24 hours.
- I also soaked the dates for 24 hours. I used a food processor to blend them very fine instead of chopping them.
- I made them snickerdoodle with Swerve and cinnamon on top.
- They came out perfect at 15 mins, 350F.
The texture is very fluffy and light, almost like a cake. Will definitely be saving this recipe for the future.
