i was really fascinated to watch the baking soda start bubbling in the butter milk! i guess it's one of those acid+base catalysts that give this recipe the lift it gets! it has a moist, cake like crumb and such sweetness! just what I hoped for to pair with my sharp white cheddar, aged smokey gouda mac n cheese. thanks!

The first time I made this recipe I accidentally used 1/2 stick of butter rather than a whole stick... a made it again twice and the this time I used 1/2 stick again because it turns out lighter and rises a little bit more. I cooked it in a cast iron pan @375 for 25 minutes. I sprayed the pan with cooking spray. My secret ingredient is cinnamon so I added a couple of shakes of cinnamon and a splash of vanilla extract. Excellent!

Update: After making this several times... Now my grandchildren want it Every Time they visit. It is so much like cake & they love it!! Scrumptious 😋
