- 2 shallots (chopped)
- 2 cloves garlic (chopped)
- 1 stalk celery (fine chopped)
- 2 Tbsp. flour (all-purpose, can use gluten-free all-purpose flour for a GF stew)
- 1/2 cup white wine (I used Pinot Grigio)
- 1 cup milk
- 1 cup heavy cream
- 16 oz. oysters (if they are large you can chop them)
- kosher salt
- 1/4 tsp. cayenne pepper (I added a pinch more at the end because we like it spicy)
- 1/4 tsp. paprika
- 1/4 tsp. white pepper
- flat leaf parsley leaves (Fresh, chopped, optional)
- oyster crackers (optional)

Family enjoyed! I actually doubled the amounts, using 48 oz of oysters (previously shucked and frozen), used green or spring onions and Riesling, which seemed to work!
