This is a great ‘quick prep’ soup. Excellent base flavour. I will add some small noodles next time to add some extra texture.
I had 1.5 breast left for another meal the next day.
My thought is next time add a couple potatoes and all of the chicken and in the end a can of coconut milk and some curry paste for a Thai curry feel to it.

Freaking delicious! Can’t wait to make it again. Pretty easy too. I had to change a few things to make it FODMAP compliant for my husband, but it was still amazing.
Changes: used garlic infused oil instead of garlic, used leek greens instead of onion, used celery seed and a couple leaves of Napa cabbage in place of celery. I heated the oil and sautéed the leeks before adding all the other ingredients. Amazing. Great work grandma!

Just what I wanted! Delicious and savory, this broth is perfect! My 2 toddler girls even loved it.
Didn’t have time to thaw the whole chicken but used 4 bone in thighs and 2 drumsticks and it was perfect! Served over rice. Will make again!

Great recipe for good ole chicken soup!! I generally use a recipe as more of a guideline than an exact science, this is a good one....ancient mexican secret, I added a fresh whole habanero and thai chilis to give it a kick....dice some fresh cilantro and sliced avacado add to bowls when served (a staple through out mexico...matter of fact, i don't think i ever had "sopa (or caldo) de pollo" without sliced avocado ever when i was south of texas.... and yea you can add some rice, or egg noodles...tdays experiment is egg noodle added later...eat w/ corn bread, or simmered tortillas..yum!!

This came out very nice. I cooked as directed but with fresh basil & thyme. After 2 years of takeout my body needed something wholesome like this.
If I were remaking I would have chopped my veggies a little thicker. the two hour cook time really breaks them down a bit

I cheated a little...bought rotisserie chickens (garlic pepper flavored), they were delicious! Doubled the veggies. Added dumplings before serving. So, so good!

This soup has become my new go to. It is so easy. I end up with more chicken than I can use in this soup so it gets incorporated into another meal.

Five Stars without a doubt, absolutely fantastic, best i've had in many years. I used Chicken stock instead of water. I think if I have enough of this soup I will never get sick again. ! Great Job

This is my go to for whenever someone is sick. Making it with the whole chicken just ups how good it is for you.
It is one of my family's favorites of all times and the recipe is requested every time I make it. Every one of my kids that has moved out has requested the recipe!

AMAZING!!! I used rotisserie chicken instead a raw one. And bullion cube instead of broth. It came out so good that my picky husband and 2 year old LOVED IT!!!!

It turned out well but I made a slight adjustment and added a packet of sazon(con cilantro y achote)

I added peas & corn and replaced celery with Bak choy and replaced basil with parsley. Also used chicken broth instead of water. It was YUMMY!

It’s so good! My partner was not well. Decided to cook this and he had two helpings. He absolutely love it.
