I made it for my mom, who was a wonderful cook but can no longer do so. It needed to be just like she would've made it. She loved it!

Convert this to Instant Pot. Add minced garlic, some carrots, and some celery while sauteeing onions and swap sharp cheddar for the heavy cream. Use 2% milk. Adjust seasonings and salt and pepper to taste.

Doubled and added minced garlic with onion when I was softening them. I also added 2oz cream cheese. It’s very tasty and once I blended a little of the soup and added back it was a good consistency, I was worried because the blended soup got very thick

I made this tonight and it’s ok, not going to make it again. Not a lot of flavor, I blended part of the soup to thicken it up added extra pepper, green onions, bacon bits and cheddar cheese. Still not impressed there are better soup recipes out there.

Delicious amd easy. Did recipe as written and would definitely make it again. Great for a cold night.
