- 3 celery (leafy stalks, chopped)
- 2 leeks (trimmed, washed, thinly sliced)
- 3 sprigs thyme (fresh)
- 2 tsp. tarragon (fresh, chopped)
- 2 bay leaves
- 2 cups clam juice
- 4 cups kale (washed, chopped)
- 3 cups water (clam, leftover from steaming clams)
- coconut oil
- 6 cloves garlic (chopped)
- red pepper flakes (optional)
- 2 pinches nutmeg (fresh ground if you can)
- 15 oz. clams (can whole baby)
- 1 1/2 Tbsp. coconut oil
- 1 qt. chicken stock (or broth)
- 15 oz. full fat coconut milk
