- 1 cup full fat coconut milk
- 1 cup strawberries (fresh, washed and hulled, plus more for garnish)
- 1/2 lime
- 1/2 lime
- 20 drops vanilla (or plain pure liquid stevia, or to taste)
- 3/4 tsp. xanthan gum (for corn-free, use this brand)
- 1 1/2 cups almond (unsweetened, cashew or other alternative milk of choice)
- 1 Tbsp. apple cider vinegar
- 1/4 cup xylitol (or use stevia to taste)
- 2 tsp. pure vanilla extract
- 1/2 cup extra virgin olive oil (preferably organic)
- 1 1/2 cups almond flour (I used this brand)
- 1/3 cup coconut flour
- 1/2 cup potato starch
- 1 Tbsp. baking powder
- 1/2 tsp. ground flax seeds (finely, or flax meal)
- 1/8 tsp. fine sea salt (or to your taste)
