- 1/2 cup sweetener (Dietz Sweet, for sugar-free or granulated, choice, such as coconut sugar)
- 1/4 cup full fat coconut milk
- 4 eggs (pastured)
- 1 tsp. maple extract (organic)
- 2 cups shredded carrots
- 2 1/2 cups almond flour (superfine)

- 2 Tbsp. coconut flour
- 1 Orange
- 2 tsp. canela
- 1/2 tsp. ground nutmeg
- 1 tsp. ground ginger
- 1 1/2 tsp. baking powder
- 1 tsp. baking soda
- 3/4 cup raisins (optional, omit for very low-carb)
- 16 oz. cream cheese (cultured, such as Nancy's brand, softened)
- 4 Tbsp. palm shortening
- 1/2 tsp. maple extract (organic)
- 3/4 cup sweetener (powdered granulated, I used Dietz Sweet, but coconut sugar or maple sugar will also work.)
