Overall very good & simple. The directions as given include coconut milk but that's not included in the directions - as I think the instructions were updated. I replaced the 2 tbsp Erythritol with 3 tbsp Xylitol. I also added cocunut flakes and used cocunut oil.
I know these are supposed to be carb-friendly but for my tastes I will want something just a little extra/sweeter next time - maybe more xylitol or something?
Update: After giving this some more though I well say I believe the muffins were rather dry (now that could have been something I did but I noted my changes). I will try and play with this recipe again to see if I can fix that AND try get some more flavor out of them. I don't want just texture but something with as much flavor as well if possible.
I understand it's supposed to be Keto and that substitutions to chemically processed to supposed 'perfection' never taste the same but I sill feel something more is needed (for my tastes anyways). I'm not a baker by any means so I'll just keep trying.
