- 1 pinch salt
- 4 Tbsp. vegetable oil
- 1 bay leaf
- 5 cardamom pods (green)
- 4 cloves
- 3 cms cinnamon stick (broken)
- 2 onions (medium, finely sliced)
- 6 cloves garlic (pounded to a paste)
- 2 ginger (” peeled, pounded to a paste)
- 1 tsp. chilli powder (Kashmiri red)
- 1 tsp. cumin powder
- 1/2 tsp. fennel powder
- 2 Tbsp. tomato puree
- 120 mL water
- 2 Tbsp. melted butter
- 1 pinch saffron (infused in 2tbsp of warm water)
- 1 Tbsp. mint (finely chopped)
- 1 Tbsp. coriander (finely chopped)
- red onion (to serve)
- lemon wedges (to serve)
- chutney (to serve)
- 500 grams basmati rice (washed & drained)
- 2 bay leaves
- 3 green cardamom pods
- 1 liter water (or vegetable stock)
