  • duxelles (Mushroom, ingredients below -----)
  • 1 pound cremini mushrooms (base removed)
  • 1 tablespoon extra-virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • crepe (ingredients below -----)
  • 1/2 cup all purpose flour
  • 2 eggs
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 tablespoons chives (minced, or 1 small bunch from store - I once made this recipe without the chives and the recipe was just fine.)
  • 1/2 cup whole milk
  • 1/4 cup water
  • 1 tablespoon melted butter (for the crepe batter)
  • 3 tablespoons melted butter (for crepe making in pan)
  • filet mignon (ingredients below -----)
  • 4 slices beef tenderloin (filet mignon, 6oz portions)
  • kosher salt (or Flake)
  • black pepper
  • 1/4 cup ghee (or clarified butter if handy, or else good unsalted butter)
  • german mustard (or English mustard if you want a bit of hot mustard kick)
  • beef (wellington wrapping ingredients below -----)
  • 1/2 pound prosciutto (I prefer pre-packaged prosciutto with plastic separates between each slice for this recipe. Easier to get apart and nice and flat for wrapping of filets)
  • 14 ounces frozen puff pastry (sheet of, thawed per box's instructions, I use Dufour's Classic Puff Pastry)
  • flour (for rolling pastry out)
  • 1 egg yolk (whisked)
  • 1 tablespoon whole milk
