- 1 1/2 cups self rising flour
- 1/4 cup flour (Bobs Red Mill almond meal)
- 5 Tbsp. Dutch-processed cocoa powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 3 large eggs (room temperature)
- 3/4 cup fine granulated sugar (super, if you only have regular granulated sugar, that’s will be just fine)
- 2 tsp. vanilla extract (use a good quality)
- 1/2 cup canned beets (drained and grated, This is so easy to do. Just run the beets over box grater to measure up to 1/2 a cup.)
- 1/8 cup low fat sour cream (plus skim milk added to measure to 1/2 cup)
- 2 Tbsp. brewed coffee (strong, please do not use instant., I used decaf)
- colored sprinkles (optional)
- 1/2 cup bittersweet chocolate chips (or semisweet, or dark chocolate bar, chopped up.)
- 2 Tbsp. brewed coffee (strong)
- 2 Tbsp. agave nectar (or good quality honey)
- 1/4 tsp. vanilla extract
