- 4 parsnips (peeled and cut into little fingers)
- 1 sprig fresh sage (leaves picked)
- 1 Orange (zest of, unwaxed)
- 1 Tbsp. honey
- 25 grams butter (or olive oil 2 good-sized leeks, washed, trimmed and sliced)
- 3 sprigs fresh thyme (leaves picked)
- 2 heads greens (winter, stalks removed, roughly shredded)
- 1/2 lemon (grated zest and juice of, unwaxed)
- 1 red chilli (finely chopped)
