Make these almost every weekend. Ive used buttermilk in place of whole milk, didnt taste much difference but a good way to use extra buttermilk up.
We like to add chocolate chips or blueberrys to the mix as well. very good, tender, fluffy pancakes. always add some vanilla and cook with butter in the pan for crispy edges. Mmm!

I've been making this recipe with my own twist since before recipe boxes were digital. For years I've been using whole wheat flour and I typically sub 1 tsp pure vanilla for the sugar. Also, if you don't have unsalted butter, don't add the extra salt to the dry mix. The key to this recipe is the sifting- that makes the pancakes fluffy and they will be more dense if you don't. We also frequently add cinnamon, pumpkin spice or unsweetened cocoa to change it up. You can easily combine the dry ingredients and keep them in an airtight container for a very quick whip up.

Made 11-12-2016. Very light and fluffy. Reduce salt added zest of 1 lemn and 1 tsp of vanilla. Very comparative to fluffy pancake recipe allrecipes.com
